Ingredients
- 2 whole sweet potatoes
- 2 teaspoons cold butter
- sprinkle of cinnamon sugar or plain cinnamon powder
- sprinkle of natural or sea salt
Directions
- Prepare the Potatoes: Wash the potatoes thoroughly under cold water and pat them dry with a paper towel.
- Bake Potatoes: Lightly grease a metal sheet pan, lay potatoes side-by-side. Bake 380 degrees about 50 to 55 minutes or until tender. Check for doneness by piercing potatoes with a fork. They should be soft.
- Remove from Oven: Allow potatoes to cool until you can handle them. Gently peel them and cut into rounds about 1 inch thick. Discard peels or compost.
- Pan Fry Yams: Now these cooked sweet potatoes are generally referred to as yams in the Carolina’s. They are ready for lightly pan frying with the butter. Gently turn over yams in the pan over medium low heat about 8-10 minutes. Turn as needed to prevent sticking or burning.
- Season: Season yam patties with salt and cinnamon sugar as desired. Serve warm, refrigerate leftovers and eat within 3 days.
Notes
*Cooking potatoes in the oven with other baked foods saves time.
*You can cut up leftover patties and use them in stir fry, reheat cut pieces in pan with crispy bacon pieces added, or mash with a fork and added melted butter for sweet potato puree.
