Happy September to my lovely subscribers. I am truly grateful for each of you and hope you are enjoying reading my quick articles and even trying out recipes written for two. I find it daunting to read heavy, thick recipe books and convert recipes that were written to serve 10 or twelve. Occasionally I still cook recipes and dishes for 10 servings and freeze leftovers for easy meal prep later.

Last weekend was one of those big food shopping trips to a Harris Teeter food market. This company is based in North Carolina and has stores in the Southeastern US. I am not affiliated with this store but appreciate the ability to find high quality meats and seafoods after living in a rural town with few options.

I am blessed to live in a sweet part of historic downtown Summerville, South Carolina and get to shop in this clean, high quality neighborhood store regularly. I’d like to share some of the features of the store, not including the Starbucks coffee shop, fresh baked pizza station, and hand rolled sushi department.

Roma Tomatoes , Bananas, Kiwis, Lemons, Florida Oranges, Granny Smith Apples, and a Spanish Red Onion are this week’s fruit and veg. These will go great in a cold pasta salad.
Red skinned Potatoes, Yukon Gold Potatoes, and Garlic heads. These will go well with the pork chops.
Local dry mix seasonings for shrimp dinners
Iberian boneless Pork Chops that will be seared on a cast iron pan and finished in the oven with potatoes. A quick side salad goes well with this dinner.
Butcher shop with steaks, chops, and chicken
Deli bar with Olives, Sun-dried tomatoes, marinated artichoke hearts and mushrooms. There’s a big, beautiful produce department with salad bar, hot food buffet, and soup station sold by the pound.
Cheese Shop; American and imported cheeses with various fruit spreads and accoutrements.
Salmon fish fillets and salmon patties are only in this cooler. Other fish and shellfish are available in cases also. Fresh lobsters in an aquarium are sold by the pound.
Beef Franks, Chicken Kebabs, and Marinated Chicken Wings are grill-ready options.
There’s a good selection of Breads, Rolls, Cakes, and sweets. They have a deli with meats, cheeses and prepared salads and meals to-go. There’s a sandwich shop in the deli with Boars Head meats and house made breads.

I picked up 1 pound of Shrimp from the seafood case. I’ll clean them and put them on metal skewers for grilled Shrimp Kebabs that will go with pasta salad.

Blackened Shrimp Kebabs, grilled cherry tomatoes and lemon crown

Blackened Shrimp kebabs with sweet and spicy cocktail sauce and lemon. I grill more than we’ll eat at once while the charcoal is hot and use leftovers the next day. Grilled shrimp dinner salad and shrimp salad are favorites. Simply chop the leftover cooked shrimp, add about a teaspoon of olive or avocado oil, add 1 tablespoon of mayonnaise, and chopped herbs for a flavorful herbed shrimp salad. You can serve this dish with one or more side recipes; Crispy Squash Fritters with Roasted Garlic Dipping Sauce, cool Garden Pea Salad Creamy Southern Style Pea Salad for 2, or Southern Cole Slaw Two Carolina Style Barbecue Cookout Side Dishes; Sweet Potato Souffle’ and Cool Coleslaw Recipes for 2.

  • Dill, cilantro, ground coriander, lemon basil, or curry spice are all great seasonings for shrimp salad with flavor without the fuss. Use what you have and like!
