This Sunday is Father’s Day in America, a day for honoring the man of the house with something a little special. Maybe it’s a few hours together eating Father’s Day supper finished with classic Southern Banana Pudding or Blueberry Pie and a cup of coffee. However you spend time with Dad will be quality time well spent, even if it’s quiet time remembering Father’s Days past. Ingredients

  • 1/3 Cup Self-rising flour
  • 1/4 C Sugar, white
  • 2 Tablespoons Sugar, powdered confectioners’ sugar
  • 3 ripe large bananas, organic and sliced
  • 2 C Milk or soymilk
  • 1 C Cream, heavy whipping style
  • 1 Teaspoon Vanilla extract
  • Pinch of Salt
  • 3 Eggs, separate yolks from whites
  • 1/2 Box Vanilla or “Nilla ” wafer cookies

Directions

  1. Prepare the Fruit: Peel and slice bananas thinly. Remove brown spots and toss out.
  2. Prepare the Dish: Divide the cookies in half to cover the bottom of 8×8-inch glass dish. Line the bottom and sides of dish, using broken cookies on the bottom. Add sliced bananas to top the cookies.
  3. Prepare the Pudding Mixture: In a bowl combine flour, salt and sugar with a large spoon. Add milk and stir in. Cook on medium-low heat until tiny bubbles form around edges, stir constantly. Slowly add some warm milk into the egg yolks and stir gently. Combine the egg yolks with milk in the pot and continue to slowly stir to prevent scorching milk or eggs. Heat should be lower, allowing milk and eggs to warm but not boil hard. Stir until pudding consistency forms. Remove from heat and stir in 1/4 teaspoon vanilla extract. Don’t let mixture get too thick, it should soak into the cookies to soften them.
  4. Layer Pudding with Fruit: Pour half of pudding over bananas and cookies. Use spatula to spread pudding over cookies evenly. Add another layer of bananas, then last of cookies spread nicely over fruit. Use last of pudding to top the layered pudding dessert.
  5. Garnish and Serve: Chill the pudding in frig or serve warm, it’s good either way. Top the pudding with fresh whipped cream. Use a hand mixer or whisk to whip up heavy cream, 1/4 teaspoon vanilla extract, and confectioner’s sugar until it’s a stiff peak. Refrigerate leftovers up to three days.
