Clemson Blue Cheese Dressing

Ingredients
  

  • 4 ounces Clemson Blue Cheese
  • 4 ounces Mayonnaise substitute egg-free mayo
  • 3 Tablespoons Buttermilk substitute with non-dairy milk + 1 teaspoon white vinegar or lemon juice
  • 2 Tablespoons Sour Cream substitute with Silken tofu blended well
  • 2 Teaspoons Red Wine Vinegar, optional
  • 1/4 Teaspoon Garlic Powder, optional substitute with 1 small, mashed, fresh garlic clove
  • dash Salt + Black Pepper to taste

Equipment

  • 1 blender

Method
 

  1. Combine all ingredients in a blender or food processor with half the blue cheese. Mix on medium low until blended. Very lightly stir in the last half of cheese for a crumbly, lumpy texture this classic dressing is known for. Season to taste with salt and pepper.
    Refrigerate at least 30 minutes before serving cold. Refrigerate leftovers up to 4 days.

Notes

Clemson Blue Cheese dressing is easily made egg-free with some quick modifications and is still as peppery, tangy, and delicious as ever. Try this highly flavorful and protein-rich dressing on lettuce salads, raw vegetables, sliced pears and apples, and chicken wings.
