Cabbage is one of those down-home Carolina staples that shows up each Southern season. Red and green cabbages grow well in the Carolina states and are found in all famer’s markets from Spring to Winter. I have fond memories of cutting and collecting them from a dusty field during summer break. Cabbage is easy to grow and provides a lot of fiber-rich meals for little money. You’ll find them everywhere from rural backyard gardens to formal dining restaurants in the Carolinas.

Easy Southern Cabbage Recipes

It’s easy to incorporate delicious cabbage into your weekly menu with these classic Carolina cabbage recipes; cabbage rolls, South Carolina style creamy coleslaw, North Carolina style red slaw, picnic coleslaw, and Clemson Blue Cheese slaw. Red Drumhead cabbage thrive in hot, humid climates and are known for having distinct crunch and color. The green Golden Acre and Brunswick varieties are most commonly grown and eaten around here; these recipes all use green cabbage. Find farm-fresh cabbage varieties from a nearby produce market and support local farming families in your community.

Lowcountry Picnic Coleslaw

Classic South Carolina picnic coleslaw with honey dressing makes an easy-to-serve salad without mayonnaise.

Ingredients
  

  • ¼ Head Green cabbage, blend in red or purple if you like Rinse well under cold water, remove outer leaves and core, shred fine.
  • 1 Small Carrot, grated Rinse and peel.
  • 2 Tablespoons Vinegar, rice wine vinegar or apple cider vinegar
  • 2 Tablespoons Vinegar, distilled white
  • 2 Teaspoon Honey
  • 2 Teaspoons Salad oil, canola, olive oil or avocado oil
  • Teaspoon Celery seed
  • Teaspoon Salt
  • Teaspoon White or black pepper
  • ½ Teaspoon Mustard, spicy brown style or Dijon Add more for an extra tangy flavor.

Method
 

  1. Make the dressing by mixing together all ingredients except the cabbage. Stir well or put in a clean jar with good fitting lid and shake to incorporate. Add salt and white pepper to taste. Pour dressing over the prepared cabbage and carrots in a bowl and combine with a spatula or big spoon. Allow slaw to marinate in refrigerator at least 30 minutes prior to serving. Serve cold.
